Game mushroom skewer with blackberry ketchup and berries Ingredients: 1 kg blackberries 500 gr whole cane sugar 250 gr white wine vinegar teaspoon cinnamon clove pimento Simmer all ingredients for 2 hours, strain and let them cool down. Berries: heat sugar, butter and water until they turn into caramel. Pour some white wine and lemon juice and mix the caramel. Roast the berries quickly and reduce the liquid a little bit. Serve warm. Game mushroom skewer: crumb the game tenderloin and cut it into pieces of 90-100 gr. Wrap the prunes with a slice of bacon. Cut off the mushroom stems.
